La Yerbera brings us artisanal goat cheeses. Mold-cured goat cheese is naturally ripened with controlled native flora. Its bark is naturally moldy and edible. The cut is white with a very compact mass. It is cured for 90 days, this gives it a much more intense flavor character but maintaining the creaminess that the moldy rind gives it.
